Which Joint Compound to use

What is the difference between the regular joint compound that comes in the 5 gallon, green bucket -and- the fast setting joint compound that comes in the blue, 4.5 gallon bucket?
What are the advantages and disadvantages of each?

I'm not a rookie, (not a pro either), but I have had good results with the "green" one.

Regular joint compound is just fine.. you can use the fast setting compound when you need to apply many coats very rapidly.

Yeah, I believe the fast-setting is lighter and doesn't dry as hard. It's best use is when mixed 50-50 with the 'regular'.
