Is it safe to assume that you can remove any interior walls if you have fink trusses? I have fink (W) trusses on 24 inch centers with a span of 26 feet between the exterior walls. The thing that concerns me is that the bottom chord of the trusses are spliced and resting on an interior wall, with the exception of the trusses over the garage. They span the full width with out any interior walls. Any worries with opening up the floor plan by removing the interior walls?

IMO it's not safe to assume anything with trusses. Consult with a truss manufacturer or engineer. It's really the only way to know for sure.

Is it stamped by an engineer? If so - look along the bottom chord and see if it shows any bearing points - it should be labeled and have a load denoted somewhere. If it doesn't then you're probably ok.
