Sheathing for Two-Story Project

We are building a 16x48 ft two-story apartment inside an aircraft hangar.

Three walls will be 2x4 and the fourth will be 2x6. There's no roof to consider and of course no wind load.

Based on your experience, would you recommend sheathing both sides of any of the first-story walls?

Yep.

Wood moves. sheathing will help keep the studs from bowing, crowning and warping.

Sheetrock on the interior accomplishes the same thing, with sheathing on the exterior.
