I'm having someone to frame my house. I want to know what is going rate per square foot for stick framing and setting a roof.Also per sheet to sheet my framing
This is just a guess based on prior pricing (your particular project may differ greatly)... typically around $12-20 / sf labor and materials.

If it helps, I was just twice quoted $9.oo per sq foot labor only (9' 2x6 outside walls, 2x4 inside walls, t&g ply deck & OSB sheathing on a 2500 sqft 2 story colonial) for a 4 man crew - this does not include steel, truss work or veranda. (this is Ontario Canadian btw). Roof trussed and sheathed was an additional $16,000 including materials and one day crane/operator. $1 less if they are able to flex the job between their larger professional contractor clients for my one-off job.

There's not a delicate way to ask this or point out some of the facts of life. I risk raising your ire but please understand that is not my wish.
Have you already hired this person?
If so there must have been an offer, and acceptance of that offer...a contract. If that is true and if I am reading into your thread title correctly, then I can only say you are shopping too late.
As a contractor I've eaten pb&j's for months on end after submitting a bum bid and honoring it. Likewise I would take a very dim view of a client trying to renegotiate my rate after we had agreed on a price.
If this person is only hired as an hourly worker, and you are dissatisfied with their productivity then there is some possibility that you can renegotiate their rate or seek someone else to do the work.

I agree. I had a contract with a framer and at the last moment he said he was raising his price. I showed him the door.
I am paying my present framer about $7.00/sq ft for framing and setting the windows and doors. Labor only. And I might add, he is doing an outstanding job.

It has a lot to do with location...
I am in NC and I have a framer who charges me 3.00/sf. stick built, no trusses. No extras for treys, etc...
He sets windows and doors, covers roof with felt, and wraps house...
