ceramic tile demo

I am bidding a job which involves demoing a substantial quantity of ceramic tile on concrete slab.

I don't believe it will be hard to demo the tile itself, but what is required to get the slab reasonably clean from the base thinset? Will a floor grinder be required, or will it be extensive hand labor? And, how fast will it likely proceed?

You can rent a powered tile remover from a store (HD has em.) It should take care of the tile and the mortar pretty quickly. YOu may have to run a grinder over some stubborn spots.
