I am looking at crown molding for the house underway now, which has a long living room with a vaulted ceiling. The LR has plant ledges/recesses in the wall above the 'standard' ceiling height. My question regards placement of the crown - having the crown following the wall/ceiling intersection up and down the vault doesn't seem quite right in my mind (and I haven't seen any houses trimmed this way), but keeping the crown at 8' through the entire LR doesn't seem to work either. (by 'work', I mean more attractive)!

Any suggestions or other alternatives?

In most houses like that i have seen crown below the plant ledge and nowhere else. usually it is a 3 piece crown. I have installed crown on a sloped ceiling in a bathroom and it looked good, but that was just a small room. I took custom made "boxes" in the corners due to the fact that mitering it would be difficult or from my observations impossible.

I install crown along a vault all the time. It looks good but keep in mind that you will have to install a transition box in the corners if you plan on running crown along all walls.
