Door Replacement

I'm taking out a metal framed door out of a 10" block wall and replacing it with a prehung unit. After I have removed the metal jamb and framed up my rough opening, should I use 1"x6"s to furr out my jamb to reach my interior wall and then use molding to finish it up or is there a preferrable way.

That will work fine. Whatever brings you flush with your interior finish.

Use something that easy to finish or matches everything else .
