Does anyone have an opinion on the backset (distance from the edge of the door) they use for their door locks?

The backset is set by the manufacturer. The standard for interior cylindrical sets is 2 3/8" but some are 2 3/4" and some are adjustable to both sizes. There are 2" backsets available for narrrow stile doors.

most locks and handles I see are adjustable for either of those two backsets. Given a choice, which would you choose and why?

It is best to get the knob close to the center of the stile on a stile and rail type door. Otherwise the larger backset gives your hand a little more room.
