In a recent post I heard (saw?) Sweep say that he really hates sagging roofs.
On that subject, our plans call for using roof trusses, 24" oc. We're using 5/8 OSB. How much do I need to worry about the OSB sagging over time. I just hate wavy roofs :)

Drywall sagging from what? 5/8" drywall on 24" o.c. should be just fine. I wouldn't use 1/2" drywall on a ceiling.

5/8" OSB (aka 19/32") on a roof will be just fine.

Just curious - Would you use 1/2" drywall on a ceiling if it were 16" o.c. instead of 24" o.c.?

Yes - 1/2" drywall on 16" o.c. ceiling joists should perform well.

Building code in my area says you must use 5/8" type X on all ceilings and garage wall if connected to house.

If I remember the IRC 2003 right (that's what is used around here), it's 5/8" type X on garage ceiling if there is habital space above and 1/2" on the garage walls (the supporting structure). 1/2" inside the house (both ceiling and walls) would be ok.
