Can air entrained concrete be worked with aluminum floats? What other float materials are acceptable? Are there float materials that are not acceptable for air entrained mixes?

More common are magnesium floats... hence a "mag". There are also wood floats that work fairly well. I've never heard of any floats that can not be used for air entrained mixes.
Most mixes do have entrained air - it just has varying percentages. The process of mixing the concrete will entrain air but for more air entrainment you must request that from the supplier. Most requests for air entrainment are when the concrete will be subjected to excessive freeze/thaw cycles.
