Is there any decent way to trim drywall on a log home so it doesn't look like complete crap? Any manufactured products out there?
Do you mean where a drywall wall intersects the logs? If so, we've scribed a 1x4 into the logs in that situation. If the wall is parallel, like a kitchen wall or something, you can make a corner with the return piece scribed into the logs.

yeah, that's exactly what I meant. My husband and I were looking at purchasing a log home, but they had just butted the dry wall up to the log walls, and done nothing after that point. It looked like total crap. I'll keep your idea in mind for future reference. Thanks.

the better log home builders usually cut a groove into the log walls so the sheetrock will slide right in then theres no need to trim
That's whats supposed to happen true - but the OP is working with an existing home. I suppose they could rip out the wall and change it.

Well due to several other similar issues, we decided we would be much farther a head to build our own home than to deal with all the existing problems with this one. Also how do they deal with the soffit panels on these houses. The soffits on this house were full of birds, because it wasn't completely sealed from the outside, and you can imagine the mess that made.
I think you've made a wise choice. Why live somewhere that was built for someone else.. different tastes, styles, etc.
Typically there is 3/8" plywood or some type of T&G to fill in the soffits. If there are rafters exposed there are logs scribed into the rafters, roof, and wall.
