we're interested in purchasing a home with a stucco front... the house is a 2 story with a side entry garage (about 3800 square feet living space)

I was wondering if anyone here has any idea of what kind of cost we'd be looking at to replace a stucco front with a stone front, or even a brick front

It can be done but probably not worth the time or money. You likely do not have a foundation that would be needed to support the masonry load and the roof line would need to be extended.

I just looked at a job like this yesterday. Was done wrong about 20 years ago and now 3 walls on the home are failing and have to be removed.

Look at a house that already has brick or stone on it or you could use the lick & stick variety available at your local box store.

Could a foundation of sorts be poured to support the masonry

Yes you could or a ledge angle could be installed. But I would get with a structural engineer regarding the bolts locations, size and, the type of steel to use such as galvanized or coated steel, or epoxy. Typical cold rolled steel will deteriorate below grade fairly rapidly.
