Would you try to get projects through underbidding (like on undertool.com) where you bid on a project and the cheapest contractor gets the deal?

For certain situations, yes. It all depends on what you are getting done IMO

A place like that is great for someone who knows exactly what they want, exactly how it is to be done and will be watching to make sure it gets done exactly like you say... all others beware!
This really is what commercial bidding is all about. The contractors and architects make some of these projects so confusing nobody can figure them out so the cheapest price often get the job and gets to... hold the bag as well.
Negotiated contracts are by fare the best approach if you care one iotta about what you having built.
