Hello. Just wanted to know if anyone can help me out?
I have a 21' load bearing wall in the kitchen and would like to remove
a 10' section. I have the steel I-Beam and would like to know what I would use to support each end with. Do I use 2x4 or 4x4 for the jack studs?

Any help would be great

It depends on the loads from above. You'll also need to carry those post loads down all the way to adequate footings.

Looking at the blueprints of the house there is a W14x27 i-beam that runs under the wall I want to remove.

That's nice. What is the span of the beam? What is the load on the beam? Where will the concentrated loads coming down on said beam from the ends of the header above be located relative to the supports of said beam? What is the ability of the beam to support those new concentrated loads? Will the concentrated loads produce any additional loads on column footings below? How big and how thick are the column footings? Still think structural designers just look things up in tables?
