I have a hip roof and I want to remove my ceiling joist in one room. Do I have to put ties back or can I leave it open?

Impossible to say without some more info. With pictures I could maybe venture a guess - but that's all it would be is a guess. Contact a local engineer and have them look at it - it's honestly about the only way that you'll get a real answer.
